2007 Shaw and Smith Sauvignon Blanc and Meredith Dairy Marinated Goats cheese
This is accepted as benchmark Australian Sauvignon Blanc and sells out each vintage. The 2007 shows generous tropical fruits and as such may be the wine to convert the most avid of Marlborough fans. It still has hints of green capsicum on the nose and a lovely crisp acid that cuts through the premium olive oil marinating the Meredith Dairy cheese. This creamy combination of goat and sheep’s milk works wonderfully in summer salads (use the infused oil as a dressing) and is a sensational accompaniment to this fine Sauvignon Blanc. Drop into your local Cheese today and give this combination a try, let us know if you agree.
